Ajvar (Roasted Pepper & Eggplant Dip)

• Ajvar is a traditional Balkan condiment made primarily from roasted red peppers and eggplant. • Roasting until deeply charred creates the characteristic smoky flavor. • For a spicier version, add additional red pepper flakes or a roasted chili pepper. • Serve as a dip with vegetables or pita, a sandwich spread, or alongside grilled tofu, tempeh, or roasted vegetables. • Stores well in an airtight container in the refrigerator for up to 5 days.     Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper. 2. Place bell peppers cut-side down and eggplant cut-side down on the baking sheet. Add garlic cloves alongside the vegetables. 3. Roast for 30–35 minutes until the peppers are blistered and charred and the eggplant is very soft. 4. Transfer the peppers to a bowl and cover for 10 minutes to allow them to steam. 5. Peel the skins from the peppers and scoop the flesh from the eggplant. 6. Add the roasted peppers, eggplant flesh, garlic, olive oil, vinegar, lemon juice, smoked paprika, red pepper flakes, salt, and black pepper to a food processor. 7. Pulse until mostly smooth while maintaining a little texture. Traditional ajvar is often slightly rustic rather than completely pureed. 8. Taste and adjust seasoning, acidity, or salt as needed. 9. Transfer to a serving bowl and drizzle with a little olive oil if desired. 10. Serve chilled, at room temperature, or slightly warm.
