    Preheat the oven to 350 degrees F and line a muffin pan with paper liners. 2. Beat together the sweet potato, eggs, applesauce, milk, maple syrup, and vanilla. 3. In a separate bowl, combine the oat flour, cornstarch, baking soda, baking powder, salt, cinnamon, and ginger. 4. Add the wet ingredients to the dry and mix until just combined; fold in chocolate chips if using. 5. Fill each liner three-quarters full and sprinkle with chopped pecans and extra chocolate chips. 6. Bake for 20-25 minutes until set. 7. Cool in the pan for 5 minutes, then transfer to a wire rack.
