Pumpkin Protein Muffins
Oat flour pumpkin muffins boosted with vanilla whey protein powder.

01Preheat the oven to 350 degrees F and line a 12-count muffin tin with liners. 2. Whisk together the pumpkin, yogurt, maple syrup, eggs, and oil until smooth. 3. Add the oat flour and protein powder and whisk until fully incorporated with no lumps. 4. Sprinkle in the pumpkin pie spice, baking soda, baking powder, and salt and whisk to distribute without over-mixing. 5. Divide the batter between the muffin wells. 6. Bake for 15-20 minutes. 7. Cool for about 10 minutes before enjoying.
