Easy Meatball Soup
Baked beef meatballs simmered with vegetables, spinach, and ditalini in a tomato broth.

01Preheat the oven to 450 degrees F and line a baking sheet with parchment. 2. Mix all meatball ingredients in a bowl until combined. 3. Roll into teaspoon-size balls and place on the baking sheet. 4. Bake the meatballs 10 minutes until browned and set aside. 5. Meanwhile, heat the olive oil in a large pot over medium heat and saute the carrots, celery, onions, and garlic 5 minutes. 6. Add the meatballs, basil, oregano, black pepper, thyme, red pepper, salt, bay leaf, cheese rind, chicken broth, and crushed tomatoes; stir, cover, and bring to a boil over high heat, about 10 minutes. 7. Once boiling, add the pasta and cook uncovered for half the package-recommended time. 8. Remove the pot from the heat and remove the bay leaf and cheese rind. 9. Stir in the chopped spinach until wilted.
