Indian Yogurt Dip (Raita)
Cooling Indian dip of dairy-free yogurt with grated cucumber, fresh herbs, and warm spices.

01Finely grate the cucumber and squeeze out the excess liquid; finely dice the onion and mince the garlic. 2. Combine the grated cucumber with the remaining ingredients in a bowl and stir. 3. Let the raita marinate in the fridge for 20-30 minutes, then taste and adjust the seasonings. 4. Serve immediately or keep refrigerated until ready to serve.
