Vegan Omelets (Breakfast)
Egg-free omelets made from ground red lentils with sauteed vegetables.

01Heat 1-2 teaspoons of oil in a skillet and saute the onion, bell pepper, and mushrooms until softened. 2. Grind the red lentils into flour in a coffee grinder or blender. 3. Combine all dry ingredients in a bowl. 4. Whisk in the water, then stir in the cooked veggies and fresh herbs. 5. Let the batter sit 5-10 minutes. 6. Heat a few teaspoons of oil in the skillet, pour in half the batter, spread evenly, and cook over medium heat 3-4 minutes; flip and cook the other side a few minutes. 7. Repeat with the remaining batter and serve.
