Add eggplant flesh, tahini, lemon juice, garlic, olive oil, cumin, and salt to a food processor. 8. Pulse until mostly smooth while maintaining some texture. 9. Taste and adjust lemon juice or salt as desired. 10. Transfer to a serving bowl. 11. Drizzle with olive oil and garnish with parsley and paprika or pomegranate seeds if using. 12.
