Lentil Bolognese
A hearty plant-forward pasta dish with red lentils, tomato paste, and aromatic vegetables simmered into a rich bolognese-style sauce, tossed with whole-grain spaghetti.

01Heat the olive oil in a pot over medium heat. Add onion, carrots, and celery and cook for 8 minutes, or until softened. 2. Stir in the garlic and tomato paste, cooking for 2-3 minutes until the paste slightly darkens. 3. Add the lentils, vegetable stock, bay leaf, and pepper. Simmer for 20-25 minutes, stirring occasionally, until the lentils are tender and the sauce thickens. 4. Stir in the salt and soy sauce. 5. Boil the pasta according to package instructions. 6. Toss the cooked pasta with about two-thirds of the lentil mixture, then spoon the remaining sauce over the top when serving.
