Zucchini Banana Bread

Whole wheat quick bread made with mashed banana and grated zucchini, sweetened with honey.

    Preheat oven to 350 degrees F and prepare a greased 8x4 loaf pan. 2. In a large bowl mix together olive oil, egg, vanilla extract, honey, banana and zucchini. 3. Stir dry ingredients (whole wheat flour, spices, baking powder and baking soda) into wet ingredients. 4. Fold in mini chocolate chips if using. 5. Pour batter into the greased loaf pan and top with additional chocolate chips if desired. 6. Bake at 350 for 40-45 minutes, or until the top is golden and a cake tester comes out clean. Allow the bread to cool for at least 20 minutes before removing from the pan.
