Healthy Apple Muffins

Whole wheat apple muffins with Greek yogurt and an optional cinnamon streusel topping.

    Preheat the oven to 425 degrees F. 2. Mix together the applesauce, oil, maple syrup, eggs, brown sugar, vanilla, Greek yogurt, and milk. 3. Add the whole wheat flour a half cup at a time along with the cinnamon, baking powder, baking soda, and salt, mixing until just combined. 4. Gently fold in the apple chunks. 5. Mix together the optional streusel topping. 6. Line and spray a muffin tin, then scoop the batter into 12 cups and top with streusel. 7. Bake at 425 degrees F for 5 minutes, then reduce to 350 degrees F for 14 minutes or until a toothpick comes out clean. 8. Cool for 15 minutes on a wire rack.
