    Preheat the oven to 300 degrees F and line a baking sheet with parchment paper. 2. Stir together the oats, coconut, sunflower seeds, pepitas, pecans, salt, and vanilla powder. 3. In a small bowl, stir together the maple syrup, oil, and vanilla. 4. Pour the maple syrup mixture over the oat mixture and stir to fully combine. 5. Spread the granola in an even layer on the baking sheet. 6. Bake at 300 degrees F for 20 minutes total, stirring after 10 minutes.
