Healthy Roasted Chicken
Whole roasted chicken stuffed with lemon, vegetables, and fresh herbs.

01Preheat the oven to 425 degrees F. 2. Pat the chicken dry, remove the giblets, and place in a roasting pan. 3. Stuff the chicken with carrots, onion, garlic, celery, lemon, and herbs, leaving extra vegetables around the chicken. 4. Tie the legs together with kitchen twine and pour the chicken stock into the base of the dish. 5. Drizzle the chicken with olive oil, rub into the skin, and sprinkle with salt and pepper. 6. Bake uncovered for 1 hour. 7. Cover with foil and bake an additional 15-30 minutes until the internal temperature reaches 165 degrees F. 8. Rest for 10 minutes, then slice and serve.
