Easy Slow Cooker Pot Roast
Seared chuck roast slow cooked with carrots, potatoes, and beef broth until fork tender.

01Heat olive oil in a large pot over medium high heat, season the roast with salt and pepper, and sear for 5-6 minutes on each side until browned. 2. In the last 2-3 minutes of searing, add the onion and garlic to the pan. 3. Add the carrots, potatoes, and broth to the crockpot. 4. Place the seared roast, onions, and garlic on top and sprinkle with dried thyme. 5. Cover and cook on low for 6-8 hours until fork tender. 6. Serve the roast with the carrots and potatoes.
