Healthy Sweet and Sour Chicken

    Heat olive oil in a large saute pan over medium high heat. 2. Cook the cubed chicken for 10 minutes until golden brown, stirring to brown all sides. 3. Whisk together tomato paste, coconut aminos, honey, apple cider vinegar, orange juice, and garlic to form a sauce. 4. Remove the cooked chicken and set aside. 5. Saute the onions, bell peppers, and broccoli for 5 minutes until they begin to soften, then remove from the pan. 6. Add the sauce to the pan, bring to a boil, then simmer for 5 minutes until thickened. 7. Return the chicken and vegetables to the pan and stir to coat; warm through for 2 minutes. 8. Serve over rice or cauliflower rice.
