01In a 6-8 quart crockpot, mix Rotel, honey, and garlic. 2. Layer the bell peppers and onion over the Rotel mixture. 3. Layer the chicken breasts on top and coat with taco seasoning. 4. Cook on low for 6-8 hours or high for 4 hours until the chicken reaches 165 degrees F. 5. Shred the chicken and mix with the peppers and Rotel mixture. 6. Serve warm on soft tortillas or by itself with fresh lime juice.
