Healthy Italian Wedding Soup
Baked turkey-spinach meatballs in an herbed chicken broth served over zucchini noodles, rice or pasta.

01Preheat oven to 450 degrees F. 2. In a bowl, mix together all meatball ingredients until combined. 3. Drop small round meatballs onto a lined cookie sheet and bake for 10 minutes until golden brown. 4. While the meatballs cook, heat olive oil in a large pot and saute onions, celery, garlic and carrots for 5 minutes until onions start to soften. 5. Add cooked meatballs, remaining spices and chicken stock to the pot (do not add the chopped spinach or zucchini noodles) and cook on high for 30 minutes. 6. Stir in chopped spinach and serve over zucchini noodles, rice or pasta of choice.
