Chicken Quinoa Soup
Slow cooker shredded chicken soup with quinoa, black beans, pinto beans and southwest spices.

01Chop onions and carrots. 2. Lay chicken breasts along the bottom of the crockpot. 3. Cover chicken with chopped veggies, diced tomatoes, beans, quinoa and spices. 4. Stir to combine, add broth, cover and cook on low for 6 hours. 5. Shred the chicken breasts with two forks and stir back in with the other ingredients. 6. Serve with fresh avocado, guacamole or cheddar cheese.
