Easy Chicken Enchilada Soup
Shredded chicken soup with enchilada sauce, green chiles, black beans and corn.

01In a soup pot, heat olive oil and saute onions and garlic for 4-5 minutes, then add bell peppers and saute an additional 3 minutes. 2. Add raw chicken breasts, enchilada sauce, green chiles, water, broth, spices, beans and corn. 3. Stir together, bring to a boil, then reduce to a simmer for 30 minutes to an hour. 4. Remove cooked chicken, shred with two forks and add back to the pot. 5. Stir to combine and serve with your favorite toppings.
