Easy Crock Pot Potato Soup
Slow cooker potato soup blended smooth with vegetables, cheddar cheese and milk.

01Heat olive oil in a saute pan and chop the veggies while it heats. 2. Saute onions, carrots and celery until onions are translucent, about 10 minutes. 3. Add all ingredients into the crockpot except milk and cheese. 4. Cook for 6 hours on high or 8 hours on low. 5. Stir in milk and cheese, then blend with an immersion blender or regular blender until smooth. 6. Serve with your favorite toppings like bacon, chives or cheese.
