Chicken Wild Rice Soup

Shredded chicken breast and wild rice soup with carrots, celery and herbs in chicken broth.

    Chop all vegetables, then heat olive oil in a large pot and saute celery, onion and garlic until fragrant and softened, about 5-10 minutes. 2. Stir in carrots and spices including bay leaves. 3. Place whole chicken breasts on top of the vegetables, cover with chicken broth and stir in wild rice. 4. Cover the pot and bring to a boil, then reduce heat and simmer over low-medium heat for 30 minutes. 5. Remove bay leaves, then remove chicken and shred with forks. 6. Add shredded chicken back to the pot, stir to combine and enjoy.
