Beef Barley Vegetable Soup
Beef stew meat and pearl barley simmered with carrots, celery, and rosemary.

01In a large pot, heat the olive oil and saute the stew meat until slightly brown, about 10 minutes. 2. When the meat is browned, add the carrots, celery, and onion and saute 5 minutes. 3. Add the beef broth, barley, tomato paste, garlic powder, black pepper, salt, rosemary, bay leaves, and Parmesan rind; stir to combine. 4. Cover the pot, bring the soup to a boil, then reduce the heat and cook on medium 20-25 minutes until the barley is cooked through. 5. Remove the bay leaves and Parmesan rind and serve warm.
