Chicken Parmesan Soup

    In a large pot, heat the olive oil over medium-high heat. 2. Add the cubed chicken and cook 6 minutes, stirring occasionally. 3. Add the celery, onions, carrots, and garlic; stir and saute 5 minutes. 4. Add the chicken broth, water, tomato sauce, cheese rind, bay leaf, basil, oregano, parsley, black pepper, and red pepper flakes; stir, cover, and bring to a boil over high heat, about 10 minutes. 5. Once boiling, reduce the heat to medium, add the pasta, and cook uncovered for half the package-recommended time. 6. Remove the pot from the heat and let sit uncovered 5 minutes. 7. Remove the bay leaf and cheese rind. 8. Serve warm topped with the cheeses and croutons.
