Healthy Stuffed Potato Skins
Baked potato skins stuffed with a corn, black bean, and vegan sour cream filling.

01Preheat the oven to 390 degrees F (200 C). 2. Wash the potatoes, pierce with a fork, and brush with a little oil. 3. Bake 45-60 minutes until soft. 4. Meanwhile, heat oil in a pan, fry the onion 2-3 minutes over medium heat, then add the corn and spice mixture and roast until browned. 5. Add the garlic and roast 1 more minute. 6. Turn off the heat and add the beans, vegan sour cream, nutritional yeast, and chopped scallions. 7. Cut each cooled potato in half lengthwise, scoop out most of the flesh, and place the skins on a lined baking sheet. 8. Mash the potato flesh with a fork and mix it into the pan; adjust seasonings. 9. Scoop the filling into the skins and top with vegan cheese. 10. Broil at 390 degrees F about 5 minutes.
