Broccoli Quinoa Casserole
Cheesy quinoa and chickpea casserole with roasted broccoli and a crunchy oat topping.

01Bring 2 cups of vegetable broth to a boil and preheat the oven to 400 degrees F (200 C). 2. Rinse the quinoa and simmer it in the broth 15-20 minutes until cooked. 3. Cut the broccoli into florets, spread on a lined tray, drizzle with 1 tbsp oil and salt, and roast about 15 minutes; meanwhile prepare the vegan cheese sauce. 4. Stir all breadcrumb ingredients except the oil in a small bowl. 5. Heat the oil in a saucepan over medium heat and fry the breadcrumb mixture 30-60 seconds. 6. Add the dairy-free milk, spices, chickpeas, and half the cheese sauce to the quinoa and stir. 7. Transfer the quinoa mixture to a greased casserole dish, add the broccoli, spread the remaining cheese on top, and sprinkle with the breadcrumbs. 8. Bake at 350 degrees F (180 C) for 15-20 minutes.
