Vegan Butter Chicken
Plant-based take on butter chicken with soy curls simmered in a spiced tomato-coconut sauce.

01Add the oil to the Instant Pot on saute mode and cook the fresh ginger, garlic, and bell pepper 2-3 minutes. 2. Add all spices, sugar, passata, broth, and the soy curls; seal and cook on manual for 10 minutes, then quick release. 3. Open the lid and add the balsamic vinegar, soy sauce, and coconut milk; stir. 4. Adjust seasonings with salt, pepper, sugar, or cayenne. 5. Serve with rice or naan garnished with fresh herbs.
