Easy Ratatouille Recipe
Skillet ratatouille of eggplant, zucchini, tomatoes, and bell pepper simmered with red wine and herbs.

01Chop all veggies into 1-inch pieces and finely chop the onion and garlic. 2. Heat oil in a skillet over medium heat and saute the onion 4-5 minutes until lightly browned. 3. Add the garlic and eggplant, cook 3-4 minutes, then add the red wine and all spices and simmer 5-6 minutes on low-medium heat. 4. Add all remaining ingredients except the tomato paste and balsamic vinegar and cook about 10 minutes until the veggies are soft. 5. Add the tomato paste and balsamic vinegar. 6. Adjust seasoning and serve with bread or rice.
