Sweet Potato Pizza Crust
Gluten-free pizza crust made from mashed sweet potato, rice flour, and tapioca flour.

01Peel, chop, and boil one medium sweet potato about 10 minutes until fork-tender; drain and mash, measuring 1 cup. 2. Preheat the oven to 375 degrees F (190 C). 3. Add the rice flour, tapioca flour, baking powder, and salt and mix. 4. Once slightly cooled, knead the dough into a ball, adjusting with water or rice flour as needed. 5. Roll the dough out between two sheets of greased parchment paper to about 1 cm thick. 6. Remove the top sheet, transfer the dough on its parchment to a baking sheet, and bake about 10 minutes. 7. Flip the crust using the second parchment sheet and peel back the paper. 8. Add your favorite toppings and bake 10-18 more minutes.
