Instant Pot Refried Beans
Creamy homemade refried pinto beans cooked in the Instant Pot with cumin and smoked paprika.

01Soak the pinto beans overnight in water, removing any damaged beans, then drain. 2. Transfer the beans to the Instant Pot with 6 cups of fresh water and salt. 3. Seal and cook on manual for 35 minutes, then quick release. 4. Drain the beans in a sieve and quickly rinse out the pot. 5. Add oil to the Instant Pot on saute mode. 6. Saute the onion 6-8 minutes, then stir in the garlic and all spices for 1 more minute. 7. Return the beans to the pot with 1 cup of vegetable broth. 8. Puree with a potato masher or immersion blender to the desired consistency. 9. Adjust seasoning and garnish with cilantro and lime juice.
