Turmeric Rice
Golden brown rice simmered with turmeric, ginger, leek, and coconut milk.

01Soak the brown rice in water for 10-15 minutes, then drain. 2. Heat oil in a large pot and fry the onion over medium heat 3-4 minutes. 3. Add the fresh ginger, garlic, leek, fresh turmeric, and all spices and fry 1 more minute. 4. Add the carrot, coconut milk, vegetable broth, and drained rice; cover and bring to a boil. 5. Cook on a low simmer 45 minutes, then turn off the heat and let sit 5-10 minutes before fluffing with a fork. 6. Adjust seasoning, garnish with fresh herbs, and serve.
