Vegan Green Bean Casserole

Green beans baked in a creamy vegan mushroom sauce topped with crispy fried onions.

    Wash and chop the green beans, boil in salted water 5 minutes, then drain. 2. For the mushroom sauce, heat oil in a large pan, saute the onion about 4 minutes, then the garlic 1 more minute. 3. Add the mushrooms and saute about 5 minutes; pour in the vegetable broth and tamari, add the spices, and bring to a simmer. 4. Mix the cornstarch with the coconut milk; preheat the oven to 400 degrees F (204 C). 5. Pour the milk mixture into the pan and cook on low-medium heat 5-10 minutes until thickened; adjust seasonings and optionally add nutritional yeast. 6. Stir in the cooked green beans. 7. Transfer to a baking dish and bake 15 minutes. 8. Add the crispy fried onions, toss, and bake a further 5 minutes.
