Spanish Rice And Beans
One-pot seasoned rice simmered with salsa and finished with kidney beans and olives.

01Soak the rice in water for at least 10 minutes, then drain; chop the onion, garlic, and bell pepper. 2. Heat the oil in a large skillet or pot, saute the onion and bell pepper about 3 minutes, then stir in the garlic and all spices for 1 more minute. 3. Add the rice, salsa, and veggie broth and bring to a boil. 4. Cover and simmer on the lowest heat 15-20 minutes without stirring or uncovering. 5. Turn off the heat, adjust seasonings, stir in the beans and optional olives, and garnish with fresh cilantro or parsley.
