Healthy Spinach Tortillas
Blender tortillas made from chickpea flour, tapioca flour, and fresh spinach.

01Process all ingredients in a food processor or blender until the batter is smooth, using less water for thicker taco-size tortillas or more for thinner burrito-size ones. 2. Pour about 1/3 cup of batter into a non-stick skillet. 3. Cook for two minutes on low-medium heat, flip, and cook about one more minute. 4. Repeat with the remaining batter.
