Homemade Taco Cups

    Place tortillas in heat-resistant bowls and bake at 390 degrees F (200 C) for about 15 minutes until lightly browned; they firm up as they cool. 2. Meanwhile, chop the vegetables; heat oil in a frying pan and saute the onion a few minutes, then add garlic and bell pepper and fry over medium heat 3-5 minutes. 3. Add all remaining ingredients except the vegan cheese sauce and fry 3-4 more minutes. 4. Fill the taco cups with the lentil mixture and top with vegan cheese sauce and fresh herbs.
