Vegan Chili Recipe

    Saute the onion and pepper in oil about 5 minutes, then add the garlic for 1-2 minutes. 2. Mix in the tomatoes and saute another 3-5 minutes. 3. Add all remaining ingredients and simmer about 30 minutes or longer, stirring occasionally and adding more liquid if too thick. 4. Optionally blend 1 to 1.5 cups of the chili until smooth and stir it back in. 5. Serve with rice, pasta, potatoes, or flatbread, garnished with fresh cilantro or parsley.
