Vegan Roasted Cauliflower Soup
Creamy blended soup of roasted cauliflower, cashews, and cannellini beans.

01Soak the cashews a couple of hours or boil 15 minutes until soft. 2. Preheat the oven to 400 degrees F. 3. Cut the cauliflower into florets, toss with oil and salt on a baking tray, and roast 30-35 minutes until browned and tender; reserve a few florets for garnish. 4. Blend all ingredients until completely smooth. 5. Adjust seasonings and thin with more broth or milk if too thick. 6. Heat the soup in a pot until warm. 7. Garnish with fresh parsley and the reserved florets.
