Spinach & "Ricotta" Cannelloni

    Prepare the vegan ricotta or use store-bought. 2. Pour some tomato sauce into an 8x11-inch baking dish. 3. Saute the onion in oil, then add the garlic, spices, and finely chopped spinach for 2-3 minutes. 4. Pulse the spinach mixture with the vegan ricotta in a food processor; preheat the oven to 360 degrees F. 5. Pipe the filling into the uncooked cannelloni tubes. 6. Place the tubes in the dish, pour over the remaining tomato sauce to cover, and top with vegan cheese. 7. Bake 30 minutes, covering with foil if browning too much. 8. Garnish with fresh herbs.
