Pumpkin Pasta Bake
Baked pasta in a creamy pumpkin sauce topped with vegan cheese.

01Cook the pasta al dente in salted water, reserving 1/2 cup pasta water. 2. Chop the onion, parsley, and garlic and preheat the oven to 360 degrees F. 3. Saute the onion and garlic in oil about 3 minutes, then add the spices, pumpkin puree, and reserved pasta water. 4. Add the plant-based milk and parsley and simmer several minutes. 5. Stir in the drained pasta and adjust seasonings. 6. Transfer to a greased baking dish and sprinkle with vegan cheese. 7. Bake 20-25 minutes until bubbly and golden, then garnish with parsley.
