Vegetable Curry

Chickpea and vegetable coconut curry with pineapple served over rice.

    Dice all the vegetables and the pineapple and mince the garlic. 2. Saute the vegetables in a little oil 8-9 minutes, then stir in the garlic for a minute. 3. Add the drained chickpeas and pineapple chunks. 4. Add the coconut milk and all spices and simmer about 10 minutes. 5. Thicken with a cornstarch slurry if needed. 6. Adjust seasonings and serve over rice, garnished with cilantro.
