Lentil Patties
Crispy pan-fried red lentil patties with sauteed vegetables, herbs, and spices.

01Rinse the lentils and simmer in the broth about 15 minutes until soft with no liquid remaining. 2. Saute the onion, pepper, and garlic in a little oil until translucent. 3. Pulse the lentils, cooked veggies, spices, parsley, ground chia seeds, and flour in a food processor until combined but still textured. 4. Form 10 patties, adding more flour if the mixture will not hold. 5. Fry in a little oil about 3 minutes per side until golden brown and crispy. 6. Serve with a dip of choice.
