1-Pot-Lentil Dal

One-pot green lentil dal simmered with carrot, ginger, and coconut milk in curry spices.

    Sort, rinse, and optionally soak the lentils 15 minutes, then drain. 2. Finely dice the carrot, onion, chili, ginger, and garlic. 3. Saute the onion in oil 3-4 minutes, then add the chili, garlic, ginger, and carrot and reduce the heat. 4. Add all seasonings, the lentils, and broth; bring to a boil and simmer about 15 minutes. 5. Stir in the coconut milk and cook 10-15 minutes until the lentils are tender; optionally puree a third of the dal. 6. Adjust seasonings and serve with rice or naan, garnished with parsley.
