Vegan Gumbo Recipe
Louisiana-inspired gumbo of lentils, okra, beans, and vegetables in a spiced tomato broth.

01Saute the onion, celery, bell pepper, and mushrooms in oil 5 minutes, then add the garlic for 2 minutes. 2. Add the spices, lentils, and broth and bring to a boil. 3. Add the bay leaves and cook covered about 15 minutes. 4. Add the crushed tomatoes and okra and simmer 10-15 minutes until the lentils are cooked but not mushy. 5. Add the soy sauce, balsamic vinegar, and beans; optionally thicken with a cornstarch slurry. 6. Adjust the heat with red pepper flakes or hot sauce, garnish with fresh herbs, and serve with rice, potatoes, or bread.
