Vegan Shakshuka

Egg-free shakshuka of chickpeas and greens simmered in a spiced tomato-pepper sauce.

    Saute the diced onion in oil about 4 minutes, then the garlic for a minute. 2. Add the greens, cover, and cook about 1 minute until wilted. 3. Add the diced tomatoes, pepper, marinara sauce, and tomato paste. 4. Stir in all spices and the sweetener and simmer about 10 minutes until slightly thickened. 5. Add the plant-based cream and chickpeas and turn off the heat after 1-2 minutes. 6. Adjust seasonings, add dollops of vegan cheese, and garnish with fresh herbs. 7. Serve with bread, rice, or pasta.
