Vegan Quiche
Egg-free quiche with a gluten-free crust, savory chickpea flour batter, and sauteed vegetables.

01Make a flax egg and rest 5 minutes, then blend all pie crust ingredients until the dough clumps; chill 30 minutes. 2. Roll out the dough, press into an 8 or 9-inch pie pan and up the sides, and refrigerate. 3. Saute the onion in oil for a minute, add the garlic, pepper, leek, spinach, and salt, and cook until the liquid evaporates; let cool. 4. Preheat the oven to 430 degrees F. 5. Whisk the chickpea flour with the milk and spices; bring the broth to a boil and slowly pour in the chickpea mixture, whisking, then simmer 5-6 minutes until thick. 6. Add the vegetables to the crust, pour the chickpea batter on top, and add halved cherry tomatoes. 7. Bake 25-30 minutes and cool completely to set. 8. Garnish with thyme and a pinch of black salt.
