Savory Crepes
Crepes rolled around a savory chickpea, mushroom, and spinach filling and pan-fried until crispy.

01Prepare homemade thin wraps or use store-bought tortillas. 2. Saute the diced onion and mushrooms in oil 3-4 minutes, then add the chickpeas, all spices, and soy sauce. 3. Fry a few more minutes, then add the garlic and spinach and cook 1-2 minutes. 4. Pulse the filling briefly in a food processor. 5. Spoon filling onto each crepe, fold in the sides, and roll up. 6. Pan-fry the rolls in a little oil on both sides until golden and crispy. 7. Garnish with fresh herbs and serve with a dip.
