Vegetable Fritters

Grated zucchini, potato, and carrot patties bound with chickpea flour and pan-fried, air-fried, or baked.

    Grate the zucchini, potatoes, and carrot, then squeeze out as much liquid as possible. 2. Cook the veggies with all the spices in a covered skillet over low-medium heat about 10 minutes, then turn off the heat. 3. Stir in the chickpea flour and let the mixture cool. 4. Shape into 6 patties. 5. Pan-fry in oil 4-5 minutes per side, or air-fry at 380 degrees F for 15 minutes flipping once, or bake at 400 degrees F for 35-40 minutes flipping once. 6. Serve with a dip of choice.
