Chickpea Tacos
Soft tacos filled with balsamic-roasted chickpeas, fresh vegetables, avocado, and tahini dressing.

01Pan-fry the chickpeas with balsamic vinegar and soy sauce over low-medium heat for about 5 minutes. 2. Chop the veggies and avocado; optionally saute the vegetables briefly. 3. Whisk the tahini dressing ingredients in a small bowl, thinning with water as needed. 4. Stuff the tortillas with veggies and chickpeas and drizzle with the tahini dressing.
