Vegan Gyro Recipe

Greek-style gyro made with seasoned mushroom and onion filling served in pita with salad veggies and tzatziki.

    Dice the onion and slice or tear the mushrooms into bite-sized pieces. 2. Heat the olive oil in a skillet and saute the onion and mushrooms for 3-5 minutes; add the garlic and gyro seasoning and fry for a further minute. 3. Add the vegetable broth and tomato paste and stir to combine; stir in the soy sauce, maple syrup, and vinegar. 4. Let the mixture simmer for a few more minutes, then turn off the heat. 5. Top a pita bread with the vegan gyro mixture, salad veggies of choice, tzatziki, and fresh herbs.
