    Sort and rinse the lentils; peel and finely chop the carrot and onion, and mince the garlic. 2. Heat the oil in a large heavy-based saucepan and saute the onion, carrots, and tomatoes until softened, 5-7 minutes. 3. Add the garlic, ground ginger, cumin, turmeric, coriander, and garam masala; stir and cook for 1 minute. 4. Add the lentils and vegetable broth, stir, cover, and cook over medium heat for about 15 minutes, stirring occasionally, until the lentils are tender and most of the liquid is absorbed. 5. Stir in the coconut milk and simmer 5-10 minutes, then add the spinach and let it wilt. 6. Season with salt and pepper to taste.
