Vegan Apple Muffins (Breakfast or Dessert)

Oat and coconut flour muffins filled with apple pieces and topped with streusel and a simple glaze.

    Grind the oats and shredded coconut separately into flour. 2. Mix all crumble/streusel ingredients in a small bowl with a fork and set aside. 3. Peel and chop the apples into small pieces. 4. Make vegan buttermilk by mixing the plant-based milk with vinegar and aquafaba; set aside. 5. Line a muffin tin with liners or grease it and preheat oven to 375 degrees F (190 degrees C). 6. Mix the dry ingredients, add the wet ingredients, and stir until just combined. 7. Fill the muffin molds 2/3 full, press about 1 tablespoon of apple pieces into the top of each, and top with the streusel. 8. Bake for about 25 minutes, until a toothpick comes out almost clean; let cool completely. 9. Mix the icing ingredients into a runny glaze and drizzle over each muffin.
