Apple Crisp Without Oats (Dessert)

01In a medium bowl, combine the flour, sugar, baking powder, cinnamon, and salt; rub in the softened coconut oil or vegan butter until small crumbles form, then refrigerate. 2. Preheat the oven to 375 degrees F (190 degrees C) and grease an 8x11 inch baking dish. 3. Peel, core, and slice the apples and transfer them to the prepared baking dish. 4. In a small bowl, combine sugar, cornstarch, cinnamon, nutmeg, salt, and cardamom; add maple syrup, water, lemon juice, and vanilla extract and stir. 5. Pour the mixture over the sliced apples, stir to coat evenly, and spread into an even layer. 6. Sprinkle the streusel mixture over the apples and add chopped nuts if desired. 7. Bake until the topping is golden brown and the apples are fork-tender, about 40-45 minutes. 8. Let rest for about 10 minutes before serving.
